MAINE LOBSTAH




Last summer we competed up in Maine (Mainely Grillin n Chillinat Raitt Farm).   Well, competitors were offered fresh lobster, CHEAP.  So, we fired up the Green Egg and melted some BUTTAH!
-Stick(s) of butter
- lobsters (just tails are fine)
- garlic (fresh or jar)
- parsley
-black pepper
-lemon

- As the BGE (Big Green Egg) fired up, we melted butter garlic (to taste) chopped parsley and black pepper in a separate pan
- Remove claws and tails - we are not from Maine - split both with shears
- we pushed a skewer through the tails to make handling easier
- Put FLESH side down on hot grate for about 5 minutes (4-5) then FLIP to shell side down
- Baste meat with the butter mixture thoroughly
- Cook approx 5 minutes - Meat should NOT be translucent - should be firm to touch
--Remove from heat and place in a FOIL BOAT or a dish if you are fancy!  Pour garlic butter goodness over and loosely foil.
--Wait 4-5 minutes and ENJOY YOUR LOBSTAHS!

**We throw Hickory/Mesquite chunks on the fire for some heavy smoke.  The cook is quick so we do not fear oversmoking
